01 - 1 lb lean ground beef
02 - 1 cup shredded cheddar cheese
03 - 1/2 cup sour cream

04 - 8 oz penne or rotini pasta

05 - 1 medium onion, diced
06 - 3 cloves garlic, minced

07 - 1 cup enchilada sauce
# Method:
01 - Cook ground beef in a large skillet over medium heat until no longer pink, about 5 to 7 minutes. Drain excess fat.
02 - Add diced onion and minced garlic to the skillet and cook until onion becomes translucent, about 3 to 4 minutes.
03 - Pour in enchilada sauce and simmer for 5 minutes to meld flavors.
04 - Boil pasta in salted water following package directions until al dente; then drain thoroughly.
05 - Add drained pasta to the skillet with beef and sauce; stir well to evenly incorporate and warm through.
